An easy but delicious dish perfect for any night of the week that the whole family will love. Serves 4-6.

Ingredients

 Extra virgin olive oilfor cooking
 1 Onionsliced
 2 Garlic clovesfinely sliced
 2 Tins chopped tomatoes
 1 tbsp Balsamic vinegar
 Salt & pepper
 Large bunch fresh basil
 450 g Dried penne pasta
 100 g Dubliner 3 Cheese Blend

Directions

For the sauce, heat a large pot over medium heat. Once heated, drizzle in a generous amount of olive oil. Add the sliced onion and cook for 5-6 minutes. Add the sliced garlic and cook for a further 1-2 minutes.

Add the tomato, balsamic vinegar and a pinch of salt and pepper. Stir well then lower heat to medium low and leave to simmer for as long as the pasta takes to cook.

While sauce is simmering, cook the dried penne pasta according to the pack instructions. Drain the cooked pasta and set aside.

Taste the tomato sauce and add more salt and pepper if needed. Roughly tear fresh basil into the sauce and mix in then stir in the cooked pasta. Add the Dubliner 3 Cheese blend and mix well.

Serve hot with an extra sprinkling of Dubliner cheese.
