Ingredients

 4 chicken breasts
 4 tbsp pesto
 8 slices Dubliner Lighter White
 8 slices of tomato
 Salt & Pepper

Directions

Pre-heat oven to 200°C / 180°C fan assisted.

Place a chicken breast between two sheets of parchment paper and use a rolling pin or sturdy pan to flatten the thickest part slightly. Repeat with the remaining chicken breasts

Arrange flattened chicken in a baking dish then season well with salt and pepper

4

Spread a tablespoon of pesto onto each piece of meat, then lay two slices of Dubliner Lighter White on top of each, followed by two slices of tomato

Season with salt and pepper then bake in the pre-heated oven until the chicken is cooked through at the thickest part, about 25 minutes

Leave to rest for about 5 minutes before serving.
